Just in time for the holidays, a great recipe for some soft, spicy cookies.
Ginger Molasses Cookies
Makes about 2 dozen cookies
Wet ingredients:
1 cups sugar
3/4 cups (1.5 sticks) unsalted butter
1/4 cup molasses
1 eggs
Dry ingredients:
2 cups all-purpose flour
1/2 t. baking soda
1/4 to 1/2 t. salt
11/4 t. cinnamon
1/2 t. ginger
1/8 t. nutmeg
Pre-heat oven to 350 degrees.
In large mixing bowl, beat sugar and butter until light and fluffy. Add molasses and eggs; beat well.
Whisk dry ingredients in separate bowl to combine. Add flour mixture to butter mixture in two batches. Mix well until incorporated.
Form dough into walnut-sized balls (or use a small cookie scooper) and arrange onto cookie sheets lined with parchment paper or silpat.
Bake at 350 for 8 to 10 minutes or until edges just begin to brown. Cool 1 minute; remove from cookie sheets. Cool on wire racks.
